Why should you embrace and eat more kale than a bunny?
-Kale has a 3:1 carbohydrate to protein ratio, which is a very high source of protein.
-It contains 9 essential amino acids (amino acids are needed to make proteins in the body)
-Kale contains Omega 3 and Omega 6 (happy mood booster –omegas!)
-One3 cup of kale contains 10,000 IU of vitamin A (via beta-carotene source)
-I cup of kale contains 80mg of Vitamin C.
-Kale may also lower blood lipids, and help reduce glaucoma.
-It also tastes really good.
Here is a Kale Salad that is really tasty:
Kneaded Kale Salad
1 bunch of kale (yes the whole thing!!!)
4 tablespoons lemon juice
1 ½ tablespoons olive oil
1 teaspoon of kosher salt
Add: almonds, goat or feta cheese, and or raspberries, mandarin oranages (or small amount of dried fruit of choice). Sprinkle chopped green onions on top and enjoy!
-strip the kale from the stem. Kneed the kale (like you were making bread with the olive oil and the lemon juice—caution if you have a cut on your hand!) in a salad bowl for 5 minutes. The longer the salad sits with the lemon juice and olive oil the more tender it will become! Enjoy!
